Getting Healthy for the Year 2013
This morning as I wake up, I whispered to my husband that I will not be cooking rice today because I have been noticing his hard fat belly for several weeks now. After all the feasting during the holidays, consuming every non-paleo
food that was served, and feeling bloated and acidic for several weeks, I
decided to go 100% paleo again, with my husband of course.
For lunch, I prepared Easy Spinach Salad, recipe taken from Sarah Fragoso's Everyday Paleo book. I paired this with Tilapia fried in coconut oil.
For dinner, I cooked Sirloin Dijon from Sarah Fragoso's Everyday Paleo. I used broccoli instead of kale. Paired this with cucumber with leftover dressing for Easy Spinach Salad.

EASY SPINACH SALAD

5 ounces spinach, washed and drained (I blanched the leaves)
4 hard-boiled eggs, peeled and sliced
1 cup sliced tomatoes
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
Sea salt and black pepper to taste
6 strips bacon, cooked and crumbled
In a large salad bowl, add the spinach, eggs and tomatoes.
In a small mixing bowl, whisk together the olive oil, lemon juice, sea salt, and black pepper.
Drizzle the dressing over the salad and toss together.
Top with the crumbled bacon pieces and serve.

SIRLOIN DIJON

Everyday Paleo
1/2 kilo sirloin strips
2 tablespoons oil
Sea salt and black pepper to taste
3 garlic cloves, minced
1/2 cup chicken broth
1/2 tablespoon dried thyme
1 1/2 tablespoon Dijon mustard
Broccoli
In a large skillet over medium heat, saute the sirloin in the coconut oil until the sirloin starts to brown.
While the sirloin is browning, sprinkle with sea salt and pepper.
Add the garlic and saute just until fragrant.
In a separate bowl, whisk together the chicken broth, thyme, and mustard.
Pour the mustard mixture over the the pan and bring to a simmer.
Add the broccoli to the pan and cook, stirring often until the broccoli is cooked.
Serve immediately.
