The Second Man Who Became Part of Our Family



    My eldest daughter, Charmaine just got married, the last of my kids to do so. And her husband, Michael Magsaysay, became the second man to become part of our family. ChaMike, as they are popularly known, became a couple months ahead of Georgina and Erich. But it took them several years to finally tie the knot. I find Mike to be a very charming man, pleasant, polite, attractive, affectionate. I thank God for giving this man to my daughter.

     Like Erich, he talked to us first before he proposed to Cham. He called me up to say he's going to pick us up and have dinner somewhere. It was in Lola Cafe where he asked our permission, no not actually asked but told us that he will be proposing in Australia. Mixed feelings again, happy for my daughter and afraid, or rather sad, thinking that the time has come that it will be the two of us, Tommy and me, again in this world.

    We began to get familiar with Mike through several family affairs. The more we are with him, the more we like him.

      I can say that Mike had been a man any girl could ask for. Cham and Mike are an example of a near perfect couple who planned their lives from day 1. They have a place of their own, a condo, carefully and beautifully designed by Cham, fondly supported by Mike.
                            
      As of this writing, they are blessed with a baby girl whom we are excitedly expecting in February or March of next year.     

      They're on their 9th month now and Mike has been doing the role of a husband admirably and I know he will be a good and loving father to their first daughter. I pray that God will bless them and guide them all throughout their married life.  Let there be respect and understanding between the two of them. May the love that started it all be nurtured by nobody else but themselves. They cannot do that without God's guidance. Life is beautiful and seeing Mike and Cham makes it so.

    Second day of Paleo and I'm again excited as to what to cook for lunch. Pork Binagoongan with Ampalaya

    One of the dishes I always have in mind when I have bagoong (fermented small shrimp) on hand is Pork Binagoongan. My mom always cook bagoong whenever we visit her for us to bring home. We love her bagoong so much that it takes only a few weeks to finish a big jar. We serve it side by side with Karekare, we use it as dip for steamed vegetables, use it to season Pinakbet and other Sauteed mixed vegetables and as dip for Manggang Hilaw (unripe mangoes). The list goes on and on...     Today, I'm sharing the recipe for Pork Binagoongan with Ampalaya and I'm using the last morsel of bagoong from the jar.   Pork Binagoongan With Ampalaya Pork Binagoongan with Ampalaya Half a kilo of pork belly strips, sliced Water enough to cover belly 3 cloves garlic, minced 1 medium sized onion, sliced 3 Tbsp. bagoong 1 medium size ampalaya, sliced into 1/2" thick 4 pcs. finger chili, sliced into 3 Place pork belly in a wok and add enough water to cover pork. Paleo Tuna Spaghetti with Pansit-pansitan

    I was glad to see my plants growing abundantly in my garden after more than two weeks of not seeing them. Thank God for my household help who tended my garden while I was away. cuban oregano pansit-pansitan basil, my poor basil, leaves were eaten by insects     I decided to try making spaghetti using carrots as pasta (Erich taught me this idea) so I can make use of these plants. Paleo Tuna Spaghetti with Pansit-pansitan     I have not cooked spaghetti since I turned Paleo and Tommy's eyes brightened when he saw what I was serving him. Spaghetti was his favorite and still is. I didn't tell him it was carrots, I just let him eat. He liked it! My Plants

 pansit-pansitan - this just grows anywhere. Twice a week, I make into salad, good for arthritis ashitaba plant - from my Bible group buddy, Girly. This is good for hypertension, munch on 2 leaves a day. pandan - bought by my daughter, Cham in Tagaytay alugbati,- I planted this oregano - I bought this tarragon  a plant used as souring agent for sinigang (forgot the name)  another kind of oregano  curry plant - this I bought saluyot gotu kola - from my Vgroup leader, Mommy Terry. This is good for memory, to prevent alzheimer's disease aloe vera - from my sister, Lolit and her husband, Lando sandakot na bigas - they grow on rocks, good for salad also okra ampalaya taheebo - from my Bible group buddy, Vita. for cleansing These are the plants in our garden. Cream Dory Paleo Piccata

Cream Dory Paleo Piccata     Piccata is a method of preparing food: meat is sliced, coated, sauteed and served in a sauce . The dish originated in Italy using veal (veal piccata). In the United States, the most well-known variant is chicken piccata. http://en.wikipedia.org/wiki/Piccata     I don't have veal and  I don't have chicken, all I have is cream dory. Found this recipe in my very prized possession for 2013, Everyday Paleo cookbook, and excitedly tried it. Tweaked a little and with a few mistakes, it tasted oh so yummy. My helper in the kitchen directly fried the fish fillet which I seasoned with salt and pepper but I haven't coated it yet with anything. I immediately sprinkled coco flour on the fish but still she had a hard time turning the fish.
